MUSHROOM AND BURRATA BUCATINI

ONE-PAN PASTA. Such an awesome 30-minute dinner

I was at this pizza focused restaurant (not to be confused with a quick grab-a-slice pizza place) with my cousin having a dinner date. When I looked at a menu, my eyes immediately honed in on every dish with mushrooms—I love them! Well, they had this mushroom burrata pasta dish that they steam in foil—ordered it! They cut the foil open at the table and let the pasta fall out onto a plate in front of me, I loved that experience! Also, it was so delicious. Naturally, I wanted to make my home version of this dish so I could have it over and over again. Instead of going the foil route, I cooked and steamed everything in one pan. It is a pretty epic dish, if I do say so myself.

TO MAKE YOUR MUSHROOM AND BURRATA BUCATINI
  1. over medium heat, melt your butter in your frying pan.
  2. Add mushrooms. Season them with salt and pepper and using your rubber spatula, mix them occasionally until softened—roughly 15 minutes.
  3. Add in 3/4 cup of the burrata water aka the water that your burrata was sitting in. Mix.
  4. Add bucatini and 1/2 cup of water.
  5. Rip your burrata into large pieces over your bucatini. Close the lid on the pan and let steam for 10 minutes using your tongs to lift and mix it all together 5 minutes in and again at the end. If you want your bucatini softer, continue to let it steam. If all of your water has evaporated at this time, add a little more.
  6. Add thyme leaves.
  7. Add 1/2 cup water and mix with your tongs. This will help loosen your burrata and keep it from clumping too much.
  8. Season to taste with salt and pepper.
  9. Transfer to the plate. Sprinkle a little pepper and some extra thyme leaves on top to make your dish extra pretty.
  10. Serve hot and enjoy!
