Imagine enjoying a moist bite of lemon flavored olive oil cake, just a bite, a pick-me-up, a joyous little moment made for you. Nix that, don’t imagine, actually make these and indulge. Pair these bite-sized muffins with your first cup of coffee for a morning you will find yourself telling your friends about. With a batch this size, take it one step further, and put a few in a baggy for those friends, after all, it’s another reason for them to love you.

TO MAKE YOUR OLIVE OIL LEMON MUFFINS
  1. Preheat your oven to 350°.
  2. In your mixing bowl, mix together your flour, sugar, baking powder, and salt until you have an even mixture
  3. Add eggs, olive oil, and lemon juice. Mix until evenly incorporated.
  4. Add lemon zest and poppy seeds. Mix until evenly incorporated
  5. Grease your mini muffin pan with your baking spray.
  6. Transfer your batter into your batter dispenser (or just use a spoon if you don't have one)
  7. Fill each of your muffin cups with batter 3/4 of the way up.
  8. Top each muffin with a little cluster of thyme. This will give that perfect touch of flavor to the muffin without overpowering it. At the same time, it will also make it adorably pretty.
  9. Bake for 19 minutes. I had to do two batches due to the size of my muffin pan. If you do too, make sure to wash your pan, cool it down with cold water, and then re-spray it before filling it.
  10. Eat at least one while they're hot—so good!
