Avocado Granola Bars


I was chatting with my girl friend the other day about avocado brownies and it got me thinking, avocado granola bars—weird or awesome? Yeah, it got weirder, I added in persimmon. It's feeling like a green eggs and ham situation. Result: total awesomeness!


TIME

PREP TIME: 15 minutes, divided

REFRIGERATE TIME: 2 hours

TOTAL TIME: 2 hours 15 minutes

6 - 10 Bars



INGREDIENTS

Minute Oats (1 Cup)

Brown Sugar (1/4 Cup)

Unsweetened Shredded Coconut (1 Cup)

Flaxseed (2 Tbsp)

Walnut Halves (3/4 Cup, Roughly Chopped)

Fuyu Persimmon (1, Pureed)

Avocado (1/2 Cup—Which Is About 1 Small Avocado—Pureed)



KITCHEN ITEMS

Large Mixing Bowl

Food Processor

Rubber Spatula

Parchment Paper

Baking Sheet

Cutting Board

Chefs Knife

1. MIXING UP THE MAGIC. combine all of your ingredients in your mixing bowl.

Use your rubber spatula to fold it together until it's all evenly mixed.

 

2. COOL IT. line your baking sheet with parchment paper.

Spread your mixture on it so that it evenly lays 3/4 inch thick.

Depending on the size of your baking sheet, you may not cover all of it. Mine covered exactly half.

Lay a second piece of parchment paper over your granola bars-to-be.

Use a small book or flat surface and press down on it.

Pressing down on your granola bars with a book will give you that flat even shape.

Refrigerate for at least 2 hours.

3. CUT IT UP. lift your bottom parchment paper to transfer your granola bars-to-be over to your cutting board.

Cut them into bars.

I went with a stick-like shape but you can make squares, hearts, circles—whatever your heart desires!
