Chicken And Marble Potatoes


Who said chicken and potatoes had to be boring?

Chicken Breast (2 Lb, Thickly Sliced)

Red Onion (1 1/2 Tbsp, Finely Chopped)

Garlic (1 Clove, Finely Chopped)

Fresh Rosemary (1 Tbsp Chopped, Plus 1 Additional Sprig)

Marble Potatoes (1 Lb, Halved)

Baby Bella Mushrooms (10, Sliced)

Lemon (1)

Radishes (4, 2 Of Them Should Be Thinly Sliced)

Yellow Grape Tomatoes (10 Halved)

Extra Virgin Olive Oil




Large Mixing Bowl

Large Frying Pan With Lid.

Pie Dish (Optional)

Meat Thermometer

TO MAKE YOUR DINNER. in your large mixing bowl, combine your chicken, onion, garlic, tbsp of chopped rosemary, salt, and pepper.

Set aside.

Coat your frying pan with olive oil over medium-high heat.

Once your oil is hot, using your rubber spatula, mix in your halved potatoes and mushroom slices.

Season with salt and pepper. 

Lay your chicken on top of your potatoes and mushrooms.

Sprinkle on your yellow grape tomato halves.

Put a lid on your frying pan and leave it untouched until your chicken is 155°—about 10 minutes.

Chicken is safest when cooked to 165°. When you remove your chicken from the heat at 155°, it's because its temperature will continue to rise after you take it off of the heat. 

Remove from heat.

This part is optional, I did it for a fun presentation. 

Transfer your chicken to your pie dish. 

Pile on your cooked potatoes and mushrooms. 

Zest 1/2 tsp of your lemon over it all.

Sprinkle on your radish slices.

Decorate your plate by adding your two full radishes to it.

Cut two slices of lemon and add them to your dish.

Sprinkle on your remaining rosemary.
