Guinness Dill Chicken


Mmmm, the broth in this dish reminds me of grandma's chicken soup! Hmmm, grandma, Guinness?

INGREDIENTS

Yellow Onion (1, Thinly Sliced)

Fresh Garlic (2 Cloves, Thinly Sliced)

Yellow Wax Beans (2 Cups, With The Ends Cut Off)

White Fingerling Potatoes (15, All Roughly 2 Inches Long, Cut Into Quarters)

English Peas (1 Cup)

Fresh Dill (1/2 Cup, Roughly Chopped)

Fresh Mint (2 Tbsp, Roughly Chopped)

Lemon (1 1/2. Cut The Whole Lemon Into Slices And Use The Juice From The Half)

Chicken Breast (2 Lb, Cut Into Large Cubes)

Guinness (12 Oz)

Paprika (1 Tbsp)

Salt

Pepper

Extra Virgin Olive Oil (2 Tbsp)

Large Mixing Bowl

12 Inch Oven Safe Frying Pan

Rubber Spatula

Oven Mitts

1. A SITTING CHICKEN. put your chicken cubes in your mixing bowl.

Season it with your paprika, salt and pepper.

Sprinkle on a tbsp of your dill.

Sprinkle on a tbsp of your mint.

Mix till your chicken is evenly coated.

Set aside and let it sit.

 

2. ONE POT WONDER. preheat your oven to 375 degrees.

Over medium-high heat, coat your frying pan with your olive oil.

Once hot, add in your garlic and onions. Mix continuously with your rubber spatula until softened—about 2 minutes.

Test your oil by tossing one slice of onion or garlic onto it. If it sizzles, it's ready!

Add in your wax beans and potatoes.

Fold all of your ingredients in your frying pan together using your rubber spatula.

Add in your English peas.

Pour half of your Guinness over your ingredients in your frying pan.

Evenly place your chicken cubes into the bed of vegetables you have created for it in your frying pan.

Pour the rest of your Guinness evenly over the top of your chicken.

Sprinkle on a little more (but not all) of your dill and mint.

Place your lemon slices evenly over the top of your dish.

Bring your dish to a boil and then turn off the heat.

Using your oven mitts, very very carefully, transfer your frying pan into your oven.

Bake for 30 minutes—or till your chicken is fully cooked.

Serve and eat!
