If you’re looking for that perfect summer side dish to go along with a grilled, well, anything—chicken, fish, steak—you’ve found it. This dish is simple, fresh, and has awesome mouth feel. It’s a tad tedious to make but if you need a mindless task or want to cook while talking over your counter to friends, this is a great dish to make.

Heirloom Cherry Tomatoes (16.5 oz container)

Mint (8 large leaves, roughly chopped—or more to your liking)

Extra Virgin Olive Oil (1 tbsp)



Ice (for ice bath)


Pairing Knife

1. TO MAKE YOUR TOMATOES. fill your sauce pan with water about an inch from the top and over high heat bring it to a boil.

In the meantime, use your pairing knife to score an X mark over the spot on the base of the tomato where the vine once connected. The scoring should only go skin deep. This will help you to more easily peel your tomatoes.

Put together your ice bath. To do so, place your large mixing bowl in your sink, fill it with cold water and add a bunch of ice to it.

Lower your boiling water to medium-high heat.

Here’s the fast paced part. Using your slotted spoon transfer all of your tomatoes into the boiling water. Let them boil for 20 seconds or until when you see the skin of the tomatoes starting to separate from their insides.

Turn off your heat.

Using your slotted spoon, quickly transfer your tomatoes into your ice bath.

Use your fingers to remove the skin from each tomato. Put them in your medium mixing bowl.

2. TO FINISH OFF YOUR SIDE DISH. mix in your mint, olive oil, salt and pepper.
