Homemade Home Fries

It's kinda the namesake, no? Making HOME fries at, well, home. 


PREP TIME: 10 minutes

COOK TIME: 40 minutes

TOTAL TIME: 50 minutes


Vidalia Onion (1/2, chopped)

Fresh Garlic (5 cloves, sliced)

Red Potatoes (4, cut into cubes)

Fresh Chives (2 tbsp, finely sliced)

Fresh Thyme (1 tbsp, leaves only)

Extra Virgin Olive Oil

Chili Flakes (1/2 tsp)

Smoked Paprika

1. TO SOFTEN YOUR POTATOES. fill your stockpot with water high enough to submerge your potatoes.

Over high heat, bring your water to a boil. Lower heat to medium.

Clean your potatoes well. 

Add your potatoes to your boiling water and cover your stockpot with its lid.

Boil for 10 minutes.

Strain your potatoes.

On your cutting board, use your chefs knife to cut your potatoes into 1 inch cubes.

You don't have to wait till your potatoes cool to cut them. If they are too hot to touch, try using a clean dish towel to hold your potato down on the cutting board with one hand and use your other to cut.


2. TO MAKE YOUR HOME FRIES. over medium heat, coat your same, now empty again, stockpot with extra virgin olive oil. 

Once your oil is hot, add in you onion and garlic making sure you use your wooden spoon to move them around consistently to sweat them.

"Sweating" means to release the juices and flavors without discoloring/browning.

Add in your potatoes.

Season with salt, pepper, cayenne and smoked paprika to taste.

Allow to cook while stirring occasionally for 20 minutes.

Mix in your chili flakes and chives.
