Orange Honey Granola Bites


I love granola bars, they are such the perfect snack. I love having a batch on hand every week. This week, I thought "why not try something different?" So, I did!

INGREDIENTS

Minute Oats (1 Cup)

Apricot Pistachio Granola (3/4 Cup. I Got Mine From FreshDirect But Feel Free To Substitute Your Fave Flavored Granola)

Flaxseed (2 Tbsp)

Unsweetened Shredded Coconut (1/4 Cup)

Semi Sweet Mini Chocolate Morsels (2 Tbsp)

Clover Honey (2 Tbsp)

Freshly Squeezed Orange Juice (1/4 Cup)



KITCHEN ITEMS

Large Mixing Bowl

Rubber Spatula

Mini Cupcake Pan

Plastic Wrap

Parchment Paper

1. STIR IT UP, LITTLE DARLIN'. in your mixing bowl, combine your oats, granola, flaxseed, coconut, chocolate morsels, honey and orange juice.

Use your rubber spatula to mix it all together.

 

2. TO MAKE YOUR BITES. cover your mini cupcake pan with plastic wrap leaving extra so that you can fill the cups.

Using your tablespoon, fill your cupcake pan with your granola mixture.

Once filled, cover your granola with parchment paper. Press down so that your granola lays flat and even.
