Pumpkin Bread Stuffing
When planning your Thanksgiving menu, there are a few no-brainers for the menu like cranberry sauce and stuffing—they're a must! But, that doesn’t mean they have to be the same old traditional versions that you have year after year. Allow them to be remarkable! Make them have wow-factor! This stuffing takes on a whole new life, it’s sweeter because of the Simple Pumpkin Bread and, well, it’s insanely awesome! Your guests will fall in love with it! Happy Thanksgiving (prep)!
TO TOAST YOUR PUMPKIN BREAD. preheat your oven to 250°.
Rip your pumpkin bread loaf into inch sized pieces and spread them out in a single layer over your baking sheets.
Put it in the oven for 1 hour.
Once toasted, transfer your pumpkin bread pieces into your large mixing bowl.
TO ADD IN YOUR FLAVORS. melt down your stick of butter in your saucepan over medium-high heat.
Add in your onion, ginger and celery.
Using your wooden spoon, continuously stir your mixture till lightly browned—about 10 minutes.
When ready, pour it over your toasted pumpkin pieces in your large mixing bowl.
Pour 1 cup of your chicken stock evenly over your pumpkin bread mixture.
Sprinkle your rosemary, thyme and tarragon over the mixture. Let it cool.
In your small mixing bowl, whisk together your two eggs and your remaining cup of chicken stock. Evenly pour it over your pumpkin bread mixture and use your wooden spoon to gently fold it all together.
