With a baby on my hands, anything I can make in advance and then smush into my mouth while entertaining him is priceless. I love that I can make these at night and eat them the next day. Oh yeah, they are also so great for eating on the way to work.

TIP: Double the batch and have it all week!


Single Serving Breakfast Frittatas




PREP TIME: 5 minutes

BAKE TIME: 20 minutes

COOL TIME: 2 minutes

TOTAL TIME: 27 minutes

Eggs (5)

Shitake Mushroom Cap (1, diced)

Fresh Thyme (leaves from roughly 10 stalks)



Butter Spray (for greasing your pan)


Chefs Knife

Cutting Board

Medium Mixing Bowl


Muffin Pan

1. TO MAKE YOUR FRITTATAS . preheat your oven to 350ΒΊ.

In your mixing bowl, beat your eggs.

Add in your mushrooms, thyme, salt, and pepper.


Spray the insides of four of the cups on your muffin pan.

Pour your egg mixture evenly the four sprayed cups.

Bake for 20 minutes or until your eggs are no longer runny.

Let cool for 2 minutes.

FYI. While baking, your eggs will grow tall out of the muffin cups like a souffle. When you take your muffin tray out of the oven, they will settle into place within a minute.
