If you’re looking for what to do with those blackening bananas, make these cake bars! They are the perfect breakfast pastry for pairing with your coffee to start your day off on the right foot. OR, if you’re having a nasty morning, the afternoon pick-me-up will change your trajectory and put you back on the awesome track.

They are perfectly cakey. And the crumble on top melds into the cake making for that textural and flavorful dynamic that makes these cake bars anything but boring. It’s absolutely not a monotonous eating experience.

Instructions

TO MAKE YOUR BANANA BATTER
  1. Preheat your oven to 350°.
  2. In your mixing bowl, use the back of your fork to mash down your bananas.
  3. Add sugar and mix it all together until you have a smooth even texture.
  4. Add eggs and vanilla extract. Mix.
  5. Add your flour, baking soda, and allspice. Mix them in fully.
  6. Line your baking sheet with your silicone baking mat. Spray the inside of your baking pan with your baking spray.
  7. Pour your batter into it. Use your rubber spatula to spread it evenly in your baking pan.
TO MAKE YOUR CRUMBLE
  1. In your small mixing bowl, use a clean fork to mix together your light brown sugar, flour, allspice, and melted butter until you have an even crumble.
TO TOP AND BAKE YOUR BANANA CAKE BARS
  1. Sprinkle your crumble evenly over the top of your batter.
  2. Sprinkle your dried cranberries and golden raisins evenly over your crumble.
  3. Bake until you have a golden color and can stick a toothpick into the center of the cake and only crumbs (no uncooked batter) come out on it—40 minutes.
  4. Transfer to your cutting board and let cool before cutting.
  5. Cut into squares, eat, and enjoy!
