BANANA MUFFINS WITH CRUMBLE

CLASSIC BANANA MUFFINS. You can’t go wrong with these

A lot of my recipes have fun interesting twists to them but sometimes you just need a good ol’ classic. This recipe is just that! The beautiful thing about having a recipe like this is that you can use it as a base and then add fixings of your own—I’m thinking chocolate chips, walnuts and/or raisins galore!

Instructions

TO MAKE YOUR CRUMBLE
  1. Preheat your oven to 400º.
  2. In one of your medium mixing bowls, whisk together your flour, sugar, and cinnamon.
  3. Add butter and use a fork to mix it all together until you have a crumble of pea-sized pieces.
  4. Set aside for now.
TO MAKE YOUR MUFFIN BATTER
  1. In your large mixing bowl, whisk together your flour, baking powder, baking soda, and salt. Set aside.
  2. In your medium mixing bowl, use the back of your fork to mash your banana down to a smooth puree.
  3. Mix in your white and light brown sugar.
  4. Gently mix in your egg.
  5. Pour your banana mixture over your flour mixture and use your fork to mix together just until it’s fully incorporated, try not to overwork it.
  6. Use your baking spray to grease 9 of the cups in your muffin pan.
  7. Fill those cups 3/4 of the way up with your muffin batter.
  8. Evenly sprinkle your crumble over all of your muffins.
  9. Bake for 18 minutes. Test to make sure that your muffins are finished by dipping a toothpick in the middle of your muffin. If any batter comes out, let them bake a little longer.
  10. Let them cool to room temperature in the muffin pan.
  11. Eat and enjoy!
