MAKE THIS WITH DAY OLD CRUSTY BREAD! It’s so good.

MUSHY BRUSCHETTA. If you have that day old loaf that has gotten a little too hard but was so good once upon a time (like yesterday) and you are trying to figure out how to enjoy it? This is how. This dish comes out on the mushier side, which I love because the juiciness of the tomatoes really seeps into the bread.

CRUNCHY BRUSCHETTA. If you want the amazing flavors in this dish but a crunchier bread base, you can make that happen! Just cook the tomatoes and the bread separately. To adjust, this recipe, check your tomatoes at 15 minutes and toast your bread on a baking sheet in the oven for 4 minutes. Still mash your tomatoes with a fork and then scoop them onto the bread.

TO MAKE YOUR BRUSCHETTA
  1. Preheat your oven to 450º.
  2. Line the bottom of your baking dish with your bread halves. You will have one piece left over to snack on cause who can resist a great bread?
  3. Drizzle olive oil over your bread. Not every inch has to be covered. You should still see the drizzle lines.
  4. Lay your tomato slices so that they overlap each other in rows that fully cover your bread.
  5. Drizzle your remaining olive oil over your tomatoes and then season them with salt and pepper.
  6. Sprinkle your sliced garlic and basil evenly over your tomatoes.
  7. Bake for 20 minutes.
  8. With your baking dish on a trivet on your countertop, use a fork to mash your tomatoes down to mush.
  9. Lift your bruschetta slices out, eat, and enjoy!
