CRISPY SAGE ROASTED SALMON WITH FRESH HERB FINISH

HERB SALMON that’s pretty enough to be a star on any Spring table.

This Lemon–Sage–Parsley Roasted Salmon is one of those dishes that feels quietly special while staying beautifully simple. Salmon filets are roasted until just tender, then finished with crispy sage leaves and a fresh scatter of parsley and dill. It’s light, vibrant, and incredibly clean which makes it exactly the kind of dish that feels right for Easter, a spring dinner, or a relaxed Mother’s Day meal. With only a handful of ingredients and very little hands-on time, it’s a healthy centerpiece that looks elegant on the table and lets the natural flavors shine.

Instructions

TO SIMPLY ROAST THE SALMON
  1. Make sure your oven rack is in the middle of your oven. Preheat the oven to 400º.
  2. Line a baking sheet pan with parchment paper and place the salmon filets skin-side down on it.
  3. Drizzle the tops lightly with olive oil. Then, season evenly with kosher salt, black pepper, and ground coriander.
  4. Lightly drizzle on lemon juice.
  5. Place the lemon halves cut-side down on the baking sheet.
  6. Roast until the salmon reaches an internal temperature of 125º-130º which is about 10-12 minutes.
  7. Finish by broiling for 1-2 minutes to add a little color to the outside of your salmon.
TO CRISP THE SAGE.
  1. While the salmon roasts, heat olive oil in a small skillet over medium heat.
  2. Add the sage leaves in a single layer, along with a couple of small stems with multiple leaves for garnish if desired.
  3. Fry for 20-30 seconds until crisp but not browned.
  4. Remove immediately and transfer to a paper towel to drain.
  5. OPTIONAL: Reserve 1 teaspoon of the warm sage oil for finishing the fish.
TO ASSEMBLE.
  1. Transfer your salmon to a serving platter with the roasted lemons. If you would like more char on the lemons, broil them separately for an additional 2-3 minutes.
  2. Sprinkle the crispy sage over the top.
  3. Garnish with parsley, dill, and a few tiny fresh sage leaves.
  4. Finish with a small squeeze of fresh lemon juice.
  5. OPTIONAL: Drizzle lightly with the reserved warm sage oil.
  6. Serve.
