FALL BREAKFAST FOCACCIA WITH BUTTERNUT SQUASH, CARAMELIZED SHALLOTS, GRUYÈRE & BAKED EGGS

BAKED EGG FOCACCIA … the perfect Fall breakfast.
This Fall Breakfast Focaccia layers roasted butternut squash, caramelized shallots, nutty Gruyère, fresh sage, and softly baked eggs over an airy, golden focaccia. It is savory and rich without feeling overly heavy, with the sweetness of the squash and shallots balancing the salty cheese and herbaceous sage.
The toppings are added in two stages so some bake directly into the dough while the rest remain visible on the surface. Small ramekins create defined wells during the initial bake, making room for four eggs that are added toward the end so the whites can set while the yolks remain soft and glossy.
Crispy sage leaves finish the focaccia as soon as it comes out of the oven. Served warm and cut into large squares. Oh, it makes for such a beautiful centerpiece for a fall breakfast table.
