This is one of those recipes that I love because you can really make it your own. I love it the way I wrote it below but really, play with it! Add your own fixings. Go raisins instead of dried cranberries. Add in some chopped up dried apricots and or dried cherries. Whatever flavor your feeling, go for it! It’s a simple recipe that will make you happy every single time you sit down to eat that once upon a time was super boring yogurt.

TO MAKE YOUR GRANOLA
  1. Preheat your oven to 350º. Line your baking sheet with you silpat (or parchment paper).
  2. In your mixing bowl, combine your oats, pecans, pepitas, almond slivers, salt, and cinnamon. Mix until you have an evenly integrated mixture.
  3. Add your maple syrup, coconut oil, vanilla. Mix until all of your oat mixture is coated.
  4. Spread in an even layer on your lined baking sheet.
  5. Bake until golden brown—about 25 minutes (but check around 20).
  6. Let cool fully untouched—about 45 minutes.
  7. Sprinkle your coconut, cranberries, currants, and chocolates evenly over your granola.
  8. Use your hands to break your granola—this way if you’re like me you can keep some of those bigger chunks that are the most delicious part!
