LOAF TURKEY AND BRIE SANDWICH

BIG SANDWICH…talk about an understatement.

If you’re making a sandwich for a group but want it to feel special, this is the sandwich you need. I made it for that exact reason and it was a huge hit. Also, it should be noted that it traveled super well which is always a plus. All I did was put it back into the plastic bag that the loaf originally came in, tied it off, and put it in a tote to carry along until we were ready for it.

When it comes to the sandwich itself, you can surely make this your own! Which I think is always a plus. I’d go so far to say that you can even fill it with leftovers from a cheeseboard—you get the idea. I chose this turkey and brie based sandwich because to date I haven’t found someone who hasn’t loved that combo (vegetarians and vegans aside). The extra fillings really make it special. Either which way you go, you are bound to love it! Happy sandwiching!

TO MAKE YOUR SANDWICH
  1. Preheat your oven to 250º.
  2. On your cutting board, use your bread knife to effectively create a lid to your sandwich. Horizontally, across your entire loaf, cut a 1 1/2 inch deep piece off. Set it aside. DON’T discard of this piece, it is going to ultimately close your sandwich.
  3. Now you’re going to create a cavity in your loaf. Use your knife to score a rectangle in the middle of your loaf—you’ll want to leave 1 inch of the soft part of your bread around your rectangle. I used the cut out soft bread to make mini sandwiches for my son and his friend. There is so much you can do with it! If you can’t think of something right now just store it, something will come to you.
  4. Use your pastry brush to brush on a layer of your honey mustard on the bottom inside of your loaf.
  5. Layer 1/2 of your turkey over your honey mustard.
  6. Create a 1/4 inch layer of brie. Reminder: remove the rind.
  7. Drizzle your honey evenly over your brie.
  8. Sprinkle on salt and pepper.
  9. Add a plush layer of basil and mint.
  10. Lay on a layer of your sliced sweet pimientos.
  11. Add a layer using your remaining turkey.
  12. Add another layer of brie.
  13. Brush the cut side of your bread lid that you had set aside with your honey mustard and close your sandwich.
  14. Place your sandwich on your baking sheet.
  15. Bake until your cheese has started to melt—roughly 20 minutes.
  16. Transfer your sandwich onto your cutting board. Cut it into 1 1/2 inch thick slices.
