MANGO BREAD

EASY MANGO BREAD … for when you need something more exciting than banana bread.

You know I’m the girl who always loves having a loaf of banana bread on her counter. When I found myself with overly ripened mangoes in my fruit basket, I had to jump into action … this mango bread is what came of it. I made it just like I do banana bread with the addition of using a food processor to blend my mango down into a smooth purée. This quickly became a family fave.

TO MAKE YOUR MANGO BREAD
  1. Preheat your oven to 350°.
  2. In your food processor, purée your mango—about 1 minute.
  3. In your mixing bowl, whisk together your mango purée and sugar.
  4. Add eggs and vanilla extract. Mix.
  5. Add your flour and baking soda. Mix them in fully.
  6. Spray the inside of your loaf pan with your baking spray.
  7. Pour your batter into it.
  8. Sprinkle coconut over the top of your loaf.
  9. Bake until you have a light golden color and can stick a toothpick into the center of the loaf and only crumbs (no uncooked batter) come out on it—1 hour.
  10. Transfer to your cooling rack and let cool.
  11. Slice, eat, and enjoy!
