Maple Glazed Banana Walnut Bread

In a pinch, I decided to make this banana bread a couple hours before my friends were showing up at my apartment. It was that mentality of, “there should always be something homemade for your guests when they come over”. I swear, just a few years ago, I would have read those two sentences on someone else’s website and hated, nay, loathed, them for making baking sound so effortless. Now, I can safely say that while banana bread looks like it takes effort, it’s literally just about making sure all of your ingredients are mixed together. Most of the time spent in this recipe is waiting for it to come out of the oven. So, don’t think on it too much, don’t expect to EFF it all up. Just dive in and in an hour you’ll both completely get what I’m saying and you’ll be super proud of yourself.

PREP TIME: 10 minutes

BAKE TIME: 1 hour

TOTAL TIME: 1 hour and 10 minutes


1 Loaf



Unsalted Butter (1/2 cup, cut into tbsp sized pieces, room temperature)

White Sugar (1 cup)

Overly Ripened Bananas (3, cut into chunks)

Normally Ripe Banana (1, sliced in half lengthwise)

Eggs (2)

All Purpose Flour (1 1/2 cups)

Baking Soda (1 tsp)

Pure Vanilla Extract (1/2 tsp)

Walnuts (1 cup, chopped, divided)

Butter Spray


Powdered Sugar (1 cup)

Maple Syrup (1 tbsp)

Whole Milk (2 tbsp)


Stand Mixer with Paddle and Whisk Attachments

1. TO MAKE YOUR BANANA BREAD. preheat your oven to 350°.

In your stand mixer, use your paddle attachement to cream together your butter and sugar—about 2 minutes.

Add your banana chunks and eggs.

Add your flour, baking soda, vanilla, and 3/4 cup of walnuts.

Grease your bread pan with your butter spray.

Pour your batter into your bread pan.

Lay your sliced banana halves on top of your banana bread batter and gently press them in.

Sprinkle your remaining walnuts on the top of your banana bread batter.

Bake for 1 hour.

Let cool in the bread pan to room temperature—about 1 hour.

2. TO MAKE YOUR MAPLE GLAZE. clean your stand mixer before starting this step.

In your stand mixer using your whisk attachment, combine your powdered sugar, maple syrup, and whole milk. If you find that you need your mixture to be a little wetter, add a little bit more milk till you’ve found the right consistency.

Pour your glaze over your banana bread letting it drip down the sides for a homey effect.

Let it sit until the glaze has hardened.

Cut into slices and serve.
