MINI MUFFINS. The mouthful you need to try

I love mini muffins. Not as a go-to in my diet per se, but as a household vibe. Having them on hand really makes life a lot easier. When my kids get hungry, they want them. Easy homemade snack—check! Also, they take very little effort to make. A quick toss-together kind of snack. They are also great in the morning before school or camp.—that perfect little bite before running out the door. Lastly, they are nut-free, making them a perfect snack to toss in a backpack—bye hangry children. I know I refer to these as a kid’s snack but I’d be lying if I didn’t say that my husband and I have been grabbing handfuls of them and gobbling them up. Have them at a brunch or a picnic. Really any time. Obsessed.

TO MAKE YOUR APPLE MUFFINS
  1. Preheat your oven to 350°.
  2. In your food processor, blend your apple quarters until you have a small even chop—about 20 seconds.
  3. In your mixing bowl, mix together your apple, apple sauce, and sugar until you have an even mixture
  4. Add eggs and vanilla. Mix until evenly incorporated.
  5. Add your flour, baking soda, and cinnamon. Mix together until you have an even batter.
  6. Grease your mini muffin pan with your baking spray.
  7. Transfer your batter into your batter dispenser (or just use a spoon if you don't have one)
  8. Fill each of your muffin cups with batter 3/4 of the way up.
  9. Bake for 15 minutes. I had to do two batches due to the size of my muffin pan. If you do too, make sure to wash your pan, cool it down with cold water, and then re-spray it before filling it.
  10. Eat at least one while they're hot—so good!
