AVOCADO MATZO TOAST

HELLO PASSOVER BRUNCH! Passover weekend just got awesome!

Let this avocado “toast” be your reason to be excited about Passover. Avocado toast is such a simple dish, and that’s what makes it so good! It’s not over done, and it’s really all about the quality of your ingredients. From there, it’s an automatic win!

In this recipe, I did add a little oomph (cause matzah) and, it was awesome! I started with some cream cheese, then gruyere, then the avocado toast ingredients you’d expect. Read on. Cook on. Eat on!

TO PREP YOUR AVOCADO
  1. Cut your avocados in half and remove the skin and pits from them. Put 3 of your 4 halves in your mixing bowl. Set the other aside for now.
  2. Mash those three halves using a fork until it’s a bowl of mush. It doesn’t have to be perfectly smooth. You can leave some texture, dealers choice.
  3. Season your avocado with 1 tsp of olive oil, lemon juice, salt, and pepper.
  4. On your cutting board, slice your remaining half of avocado into thin slices. Set aside.
TO PUT IT ALL TOGETHER
  1. Use your butter knife to coat one side of both pieces of matzo with cream cheese.
  2. Sprinkle your shredded gruyere evenly over your cream cheese.
  3. Season your cheese covered matzo with salt and pepper.
  4. Over medium heat, coat your frying pan with butter.
  5. Fry one egg at a time. Crack one egg into the frying pan and cover the frying pan with its lid. Let it cook slowly until your egg whites are fully cooked. Slide your egg onto the middle of one piece of matzo. Repeat this process with your second egg and second piece of matzo.
  6. Use your small rubber spatula to spread your mashed avocado AROUND the egg and over all of the exposed cheese.
  7. Lay 3 pieces of lox on top of each other in one corner of each of your pieces of matzo.
  8. Divide your sliced avocado between your two pieces of matzo. Fan those slices and lay them in an adjacent corner to your sliced lox.
  9. Drizzle olive oil on your sliced avocado and then season it with red pepper flakes, salt, and pepper.
