CARAMELIZED ONION MATZO PIZZA

MATZO PIZZA. DO be such a square.

Dare I say it? Yup, I do. This matzah pizza will make you look forward to Passover. These flavors and textures meld perfectly together to form a sort of geshtalt. With the addition of the eggs, you’ve got to make this matzah pizza for Passover brunch (pair it with mimosas for the win)!

TO CARAMELIZE YOUR ONIONS
  1. Over medium heat, melt your butter together with your oil.
  2. Add in your sliced onions. Use your spatula to move them around for 25 minutes.
  3. Pour your port over your onions.
  4. Raise your heat just slightly and continue to move your onions around for another 15 minutes.
  5. Remove them from the heat.
TO MAKE YOUR MATZAH PIZZA
  1. Preheat your oven to 350º.
  2. Line your baking sheet with your silpat.
  3. Lay your four slices of matzo on your silpat lined baking sheet.
  4. Using a spoon, spread your tomato sauce evenly over your four slices of matzo.
  5. Sprinkle your mozzarella evenly over your tomato sauce covered matzo.
  6. Spread your caramelized onions evenly over your matzah pizza.
  7. Sprinkle on your gruyere.
  8. Use your spatula to create a tiny well in the middle of each slice of matzo pizza you want an egg on.
  9. Crack an egg into a small bowl and then use that bowl to slowly pour your egg into the well you created.
  10. Season your egg with salt and pepper.
  11. Bake until your egg whites are cooked—about 20 minutes.
  12. Sprinkle your thyme, salt, and pepper over your matzo pizza.
