These Baked Cheddar & Chive Latkes are a crispy, cheesy twist on the classic potato pancake and require no frying. Inspired by the savory goodness of a warm cheddar biscuit, this recipe folds shredded sharp cheddar and fresh chives right into the latke mix for extra flavor in every bite. Baking them on a preheated sheet pan gives them those irresistible golden edges while keeping things neat and easy. TO MAKE YOUR LATKE MIX
  1. Preheat your oven to 425º.
  2. Place your sheet pan in the oven and let it heat for 10 minutes to get it sizzling hot.
  3. Grate the potatoes using a box grater or food processor. Transfer the mixture to a cheesecloth and wring out as much liquid as possible—you want it as dry as possible.
  4. In a large mixing bowl, combine the potato mixture, flour, baking powder, beaten egg, melted butter, salt, and pepper. Fold until fully incorporated.
  5. Add shredded cheddar and chive. Use your spatula to fold until fully incorporated.
  6. Divide your mixture into 6 even portions. Use the biscuit cutter as a mold. Scoop your latke mixture into the mold, press it down using your small spatula. Lift the mold and repeat for the rest of your latke mixture.
  7. Carefully remove the hot sheet pan from the oven and line it with parchment paper. Lightly grease the parchment with vegetable oil.
  8. Careful not to burn yourself, transfer latkes to the prepped sheet pan. Return the pan to the oven and bake until golden brown and crispy around the edges, about 20 minutes.
  9. Flip and bake until the parts that touch the pan are golden, which is another 10-15 minutes.
  10. Optionally, if you want them even like mine, use your biscuit cutter again. One at a time, place it over a latke, press it down to cut the edges off. If you need extra assistance, use a pairing knife to cut using the outside of the biscuit cutter as your guide.
  11. Transfer to a serving platter and sprinkle remaining chives over them.
