Instructions

TO HARD BOIL YOUR EGGS
  1. Place all of your eggs in a pot of cold water. Bring to a boil, then cover and remove from heat. Let sit for 11 minutes. Transfer to an ice bath and chill for 10 minutes. Peel carefully.
  2. Slice 3 eggs in half lengthwise. Remove all yolks and put them in a mixing bowl. Set the egg whites aside.
  3. Slice the rest of your eggs, save the egg whites for a snack and put the egg yolks in a separate mixing bowl (you should have 2 mixing bowls with egg yolks. 1 with the yolks from your 3 eggs and the other with the yolks from your other 4 eggs)
TO MAKE YOUR DEVILED EGG FILLING FOR THE CAVITY
  1. In your bowl that has your 3 egg yolks, mash them with 1 ½ tablespoons mayonnaise, ¼ teaspoon Dijon mustard, lemon juice, and a pinch each of salt and black pepper. Mix until ultra-smooth (you can press through a fine mesh sieve for an extra silky texture). Transfer to a piping bag fitted with a round tip.
TO MAKE THE COLORFUL DEVILED EGG YOLK "BULBS"
  1. Mash your egg yolks down with 1 tablespoon of mayonnaise — just enough to form a thick, moldable paste. Divide into three small bowls to color:
  2. Red: Dip a toothpick into red gel and swipe into the yolk mixture. Mix thoroughly. Add more color in tiny increments if needed.
  3. Yellow: Add a micro-dot of yellow gel (about ⅛ drop). Mix until bright and even.
  4. Green: Add a micro-dot of green gel. Mix and adjust carefully — green is potent.
  5. To mold the yolks into domes, press each color mixture firmly into the cavities of a silicone half-sphere mold. Smooth the tops. Freeze for 8–10 minutes until firm but not icy. Gently pop out the spheres. You should get 2–3 bulbs per color. If you encounter any cracks, use a gloved hand, dip your finger in water, and gently rub it over the crack to smooth it)
TO ASSEMBLE
  1. Pipe a swirl of the classic deviled egg filling into each egg white half. Gently top each with a colored yolk sphere, positioning it like a glowing Christmas bulb.
  2. Lay a long chive across your serving platter. Nestle each deviled egg in an alternating pattern along the chive as if it's clipped to a string of lights.
  3. Lightly sprinkle edible gold luster dust over the yolk bulbs as a festive finishing touch. To keep the shimmer clean and precise, gently wipe the egg whites with a damp paper towel after dusting to remove any excess and keep the glow focused on the bulbs.
