TO PREPARE YOUR BANANA.
  1. Mash the banana until mostly smooth.
  2. Transfer it to a small skillet over medium-low heat and cook for 5 - 7 minutes, stirring frequently, until much of the moisture has evaporated and the banana resembles a thick paste. Remove from the heat and set aside.
TO MAKE YOUR MARSHMALLOW MIXTURE.
  1. In the heavy-bottomed pot, melt the butter over medium heat. Continue cooking, stirring occasionally, until the milk solids turn golden brown and the butter develops a rich, nutty aroma, about 3 - 5 minutes.
  2. Immediately reduce the heat to low to prevent the butter from burning.
  3. Add the marshmallows to the browned butter. Stir continuously until they are almost completely melted and smooth.
  4. Stir in the light brown sugar, ground cinnamon, ground nutmeg, and kosher salt. Continue stirring until the sugar dissolves.
  5. Fold in the cooked banana and vanilla extract until the mixture is smooth and evenly combined.
TO MAKE YOUR RICE KRISPIE MIXTURE.
  1. Add the Rice Krispies cereal to the pot and gently fold with a greased spatula until every piece is evenly coated with the marshmallow mixture. Work carefully to avoid crushing the cereal.
  2. Allow the mixture to cool for 2 minutes before gently folding in the white chocolate chips. Some of the chips will melt into the mixture while others remain whole, creating creamy little pockets throughout each bite.
TO MAKE YOUR RICE KRISPIE TREATS.
  1. Transfer the mixture to a parchment-lined 8-inch square baking pan.
  2. Using lightly buttered hands or a greased spatula, gently press the mixture into an even layer. 8.
  3. Allow the treats to cool completely at room temperature for 30 - 45 minutes before lifting them from the pan and cutting into 16 squares.

Notes

  1. Use bananas with plenty of brown spots for the sweetest, most pronounced banana flavor.
  2. Cooking down the banana concentrates its flavor while preventing soggy treats.
  3. Brown butter and a touch of ground nutmeg give these treats their unmistakable banana bread aroma.
  4. Let the mixture cool slightly before adding the white chocolate so some of the chips stay intact.
  5. Store in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
