BLUEBERRY SAGE WHISKEY LEMONADE POPSICLE COCKTAIL

SPIKED LEMONADE just got reinvented.

I love a playful cocktail when hosting friends. There’s something about a popsicle cocktail that makes it both fun and thoughtful—I think the thoughtfulness part comes in with the time it takes to freeze the popsicle.

A must: dip your popsicle, pull it up, and lick it. It’s so good!

Note: if once your popsicle melts your cocktail feels too sweet, consider making it a sparkling cocktail and adding soda water.

The make ahead playful whiskey cocktail that will satiate the inner child in your sophisticated adult friend group.

Ingredients

FOR THE HOMEMADE LEMONADE POPSICLE (MAKE AHEAD)

Instructions

TO MAKE YOUR HOMEMADE LEMONADE
  1. In your saucepan, over medium-high heat, combine your white sugar and water. Mix using your wooden spoon until all of your sugar has dissolved—about 5 minutes. Remove from heat and let sit while you juice your lemons.
  2. Over a measuring cup, juice all of your lemons.
  3. Add your lemon juice to your simple syrup in your sauce pan. Mix it together with your wooden spoon.
  4. Fill all four of your 4 ounce mason jars with 3 ounces of lemonade.
  5. Pour the rest of your lemonade into your large mason jar. Refrigerate until needed. Exact timing isn't needed here because it will take far longer for your popsicles to freeze.
TO MAKE YOUR LEMONADE POPSICLES
  1. Add 4-6 blueberries and 8 small sage leaves to each of your 4 ounce mason jars filled with lemonade.
  2. Tightly cover the tops of each mason jar with foil. Wrap a rubber band over the foil and around the neck of the mason jar to really make sure it stays in place.
  3. If you want to write on your popsicle sticks, do it now. I recommend a fine point ball point pen so it doesn't bleed too much.
  4. Use your pairing knife to slice a small line in the middle of your foil. Stick your popsicle stick through it. You want the stick to stand up straight. If it feels wobbly, use tape to make a sort of L bracket on the front and back for extra support.
  5. Freeze for 8 hours. Only pull these out when you are ready to mix your cocktail.
TO MAKE THE COCKTAIL PART
  1. Pour your whiskey into your mixing cup.
  2. Add your homemade lemonade from your large mason jar.
  3. Add the elderflower liquor.
  4. Stir.
  5. Pour into your cocktail glass.
  6. Take your popsicle out from the freezer. Discard of the tape, rubber band, and foil. Run the outside of the mason jar—NOT THE INSIDE—under hot water for a few seconds at a time until it releases the popsicle.
  7. Stick your popsicle into your whiskey lemonade cocktail and enjoy!

Notes

If you know you want to make these cocktails this weekend, make the lemonade and popsicles any time this week. With everything made ahead, the cocktail takes almost no time to toss together.
