Chocolate Chip Coconut Coffee Cake Muffins

They say, when you have guests coming over, to bake something delicious to make the place smell amazing and, well, to spoil them with. Make these!


PREP TIME: 10 minutes

BAKE TIME: 25 minutes

TOTAL TIME: 35 minutes


12 Muffins



All Purpose Flour (2 1/2 Cups)

White Sugar (1 Cup)

Baking Soda (1/2 Tsp)

Baking Powder (2 Tsp)

Cinnamon (1/2 Tsp)

Salt (1/8 Tsp)

Eggs (2, Room Temperature, Beaten)

Unsalted Butter (5 Tbsp, Room Temperature)

Vegetable Oil (1/3 Cup)

Sour Cream (1 Cup)


All Purpose Flour (3/4 Cup)

Dark Brown Sugar (3/4 Cup)

Cinnamon (1 Tsp)

Unsalted Butter (4 Tbsp, Room Temperature)

Mini Milk Chocolate Kisses (1/2 Cup)

Sweetened Shredded Coconut (1/2 Cup)

Butter Cooking Spray

1. TO MAKE YOUR STRUSSEL. in your mixing bowl, combine your flour, dark brown sugar, cinnamon and butter together. Use your fork, or hands, to press your mixture down and break it up until you have an even sand-like texture. 

Set aside.


2. TO MAKE YOUR MUFFIN BATTER. preheat your over to 350º.

In your stand mixer, mix together your flour, white sugar, baking soda, baking powder, cinnamon, and salt. 

Add in your beaten eggs, butter, vegetable oil and sour cream.

Mix on a medium-high speed until you have an even batter.


3. TO MAKE YOUR COFFEE CAKE MUFFINS. spray the cups of your muffin pan with your cooking spray.

Fill your cups a quarter of the way up with your muffin batter (this will use about half of your batter).

Lightly sprinkle half of your strussel over your muffins.

Divide the rest of your muffin batter over your muffins.

Add your coconut and mini chocolate kisses to your remaining strussel mixture and then spread it evenly over your muffins.

Bake for 25 minutes.
