Instructions

TO MAKE YOUR SALMON SKEWERS.
  1. Position the oven rack about 5–6 inches below the broiler and preheat the broiler on high. Line a sheet pan with foil.
  2. In a mixing bowl whisk together olive oil, garlic, oregano, cumin, smoked paprika, salt, pepper, lemon zest, and lemon juice, until evenly combined.
  3. Add the salmon cubes and gently toss until evenly coated in the marinade. Let the salmon sit for 15 minutes so the flavors absorb.
  4. Thread the salmon onto skewers, leaving a small gap between cubes so the heat can circulate evenly.
  5. Place the skewers on the prepared sheet pan and broil for 4 minutes. Turn the skewers and broil for another 2–4 minutes until the edges are lightly charred and the centers remain tender.
TO MAKE THE LEMON PARSLEY YOGURT DIP.
  1. In a small bowl mix together your greek yogurt, olive oil, lemon juice, garlic powder, parsley, and salt until smooth.
TO ASSEMBLE.
  1. Transfer your salmon skewers to a serving dish and serve them with your yogurt dip in a small bowl on the side. Optionally, finish your dish with extra parsley and flaky sea salt.
