Lately, I’ve been cooking up a lot of salmon in my home. As someone who, as you can imagine cooks a lot, I’m looking to create super quick and easy dishes for myself that also pack a lot of flavor. This golden, spiced, and impossibly simple curry-spiced salmon recipe brings warmth and depth to the table in under 20 minutes. A fragrant blend of curry, cumin, and turmeric wraps each fillet in bold flavor without overpowering the fish's natural richness. It’s the kind of dish that feels both comforting and elevated. It’s so perfect for quick weeknight cozy fall dinners, where the leftovers are perfect smashed into a wrap for lunch the next day. This recipe promises a beautifully seasoned salmon that tastes like you tried way harder than you did.

Instructions

  1. Preheat your oven to 425º and line a baking sheet with parchment paper.
  2. In a small bowl, stir together the curry powder, ground cumin, turmeric, garlic powder, paprika, cayenne, salt, and black pepper.
  3. Pat the salmon fillets dry with a paper towel to help the rub stick better.
  4. Rub the spice mixture evenly over all sides of the salmon fillets and place them on your baking sheet.
  5. Bake until the salmon reaches an internal temperature of 145° which takes about 12-15 minutes.
