ESPRESSO BROWNIES. They will change your world.

There’s something about these brownies. First thing’s first, everyone seems to say “mmmmm” upon entry into their mouths, like pre chewing. Second thing that happens is the question, “what is that flavor? Is that Baileys? Is it whiskey? No really, what’s that hint of flavor in there?” When you ultimately say “espresso”, you see that look of “of course” spread over your friends faces. It’s like clockwork every time and it’s awesome!

What I love about these brownies is that they are extra easy to make. Some of my other recipes require a double boiler and melting chocolate bars. These, for these you just mix everything in a bowl and then put it in a baking dish and bake. It’s as close to effortless as you’re going to get with brownies from scratch. They are so good. I can’t wait for you to make them!

Instructions

TO MAKE YOUR BROWNIE BATTER
  1. Preheat your oven to 325º.
  2. In your medium mixing bowl, whisk together your melted butter and sugar.
  3. Whisk in eggs and egg yolk.
  4. Whisk espresso and vanilla.
  5. Whisk in vegetable oil and cocoa.
  6. Fold in flour, cornstarch, baking soda, and salt.
  7. Line your baking dish with parchment paper and then spray it with baking spray. Pour your brownie batter in and spread it evenly throughout the baking dish.
  8. Bake for 30-35 minutes. Check the center of your brownies with a toothpick to see if they are super gooey. If they are keep them baking. You don't want all of the gooeyness gone, but you do want it firm enough to hold it's shape.
  9. Let cool in your baking dish for ten minutes before transfering to your cutting board and cutting into squares.
