SWEET CARROTS are your new favorite side

This easy side is a must. It’s one of those sides that my whole household was asking for back-to-back bites of while it was still sitting on my kitchen counter. When I say “household” I mean my husband walking over, grabbing a fork, and eating while asking with a full mouth, and I quote, “you took pictures of these already, right?”. My four year old on tip toes, mouth now at counter height, giggling and asking asking for, “just one more” over and over again. Then my one-and-a-half year old son in my arms saying “more” and pointing at the carrots. That’s the kind of delicious I’m talking about. You will be so happy you made these—everyone will.

TO MAKE YOUR CARROTS
  1. Preheat your oven to 425º.
  2. On an angle cut your carrots into 1 inch thick pieces. Set them aside.
  3. In your mixing bowl, whisk together your melted butter, oil, and garlic.
  4. Add honey and cinnamon. Whisk it all together until your ingredients are evenly combined.
  5. Add salt and pepper to taste.
  6. Add your carrots to your honey glaze. Toss them until they are fully and evenly coated.
  7. Using a large spoon, transfer your carrots to your baking sheet leaving behind any excess honey glaze. This is important because if you have too much extra glaze on your baking sheet it will burn in the high temperature of your oven.
  8. Bake for 20 minutes. Taste test for texture. If your carrots feel too hard still, try baking for another five minutes.
  9. Transfer your carrots to your serving dish and sprinkle your thyme leaves evenly over them.
