FETA AND SPINACH EGGS

SPINACH AND EGGS … the yummy way to eat your greens.

In all honesty, one morning I was being lazy and tossed this together. The three days that followed, I made it again and again until I ran out of ingredients. I’ve now replenished said ingredients and have been making it again. This is such a quick and easy recipe that looks like anything but. Plus, it makes spinach taste extra good. I can’t recommend it more.

TO MAKE YOUR SPINACH AND EGGS BREAKFAST
  1. Over medium-low heat, spray your frying pan with your butter spray.
  2. Add your spinach. Make sure it's spread over the entirety of your pan.
  3. Crack each of your eggs over a different part of your spinach.
  4. Lightly season with salt (like 1 twist). We don't want too much salt because the feta is salty too.
  5. Season to your liking with pepper.
  6. Sprinkle your crumbled feta evenly over your dish.
  7. Cover your pan. Let cook until your egg whites are fully cooked and your egg yolks are your desired consistency. I like them jammy if you're planning to eat these without bread. If you're adding bread, let them be a little runny. For jammy eggs, it's about a 5-minute cook depending on how low your heat is.
  8. Slide your spinach and eggs directly onto your plate.
  9. Eat hot and enjoy!
