FRENCH TOAST DUTCH BABY

SWEET DUTCH BABY … that tastes like a French pastry.

The magical experience of a Dutch Baby never gets old—pour a liquid batter into a hot pan and bake it. When you pull it out of the oven, it will have blown up into what’s basically a giant pancake bowl. I wanted this Dutch Baby to feel like the cream meets bread feeling of a French pastry. I started by incorporating cinnamon into the Dutch Baby to give it a French Toast feel and then made the quick and easy cream cheese based topping. When it comes to that cream cheese mixture, I left it on the cream cheesy side versus making it super sweet because I knew I’d be topping it with extra sugar and maple syrup and wanted more of a balanced finished dish. That said, if you want it sweeter, add more confectioner’s sugar when you’re mixing together your cream cheese in your stand mixer.

Instructions

TO MAKE YOUR DUTCH BABY
  1. Lower your oven rack to the middle of your oven. Preheat your oven to 450º.
  2. In your stand mixer on high speed, whisk together your eggs, milk, and salt until frothy—about 2 minutes.
  3. Add flour, sugar, and cinnamon. Mix on medium-low speed until incorporated—1 minute. If you mix over a high speed, the flour may fly out of your stand mixer. Set aside.
  4. Place your pan in the oven for three minutes. Carefully remove it (IT WILL BE SUPER HOT) and place it on top of your stove.
  5. Place your butter cubes into your pan and let them melt. Coat your pan with the melted butter. I like lifting the pan with oven mitts on and rotating it so the butter slides around it.
  6. Pour your egg batter into the pan.
  7. Careful not to rock the pan too much, put it back on the middle rack in the oven.
  8. Bake for 20 minutes. DO NOT OPEN YOUR OVEN IN THAT TIME, it may cause your Dutch baby to deflate.
  9. While your Dutch Baby is baking, prepare your cream cheese topping.
TO MAKE YOUR CREAM CHEESE TOPPING
  1. Clean and dry your stand mixer.
  2. Initially on medium speed and when incorporated on high, mix together your cream cheese, confectioners sugar, and maple syrup until smooth and thick—about 5 minutes.
TO PUT TOGETHER YOUR DUTCH BABY
  1. Using your spatula, spread your cream cheese mixture all over the middle of your Dutch baby.
  2. Drizzle a circle of maple syrup over your cream cheese mixture.
  3. Sprinkle on your almond slices.
  4. Evenly stick your berries in your cream cheese mixture.
  5. Use your chinois to sprinkle confectioners sugar all over every part of your Dutch baby.
  6. Eat and enjoy!
