HAND-CUT BAKED SWEET POTATO AND BROWN BUTTER SAGE FRIES

BAKED SWEET POTATO FRIES are the perfect side for any meal of the day

On the softer side of fries, I’m loving these as a side for every meal! They’re too easy to eat. Pair them with eggs for breakfast, serve them with a sandwich for lunch, or even have them with a chicken dinner—it just works! The richness that comes from the brown butter sage sauce makes these seriously special (and addicting—I warned you!). You will love!

Also, THEY’RE INSANELY EASY TO MAKE! You don’t even have to peel the potatoes. Laziness, in this case, is a huge win!

Instructions

TO MAKE YOUR SWEET POTATO FRIES
  1. Preheat your oven to 425º.
  2. Put your cut sweet potato sticks into your mixing bowl.
  3. Coat them in vegetable oil (roughly 3 tablespoons should do).
  4. Sprinkle cinnamon, about 1/2 teaspoon of your salt, and 1/2 a teaspoon of pepper over your sweet potato sticks. Gently mix so that your sweet potato sticks are evenly coated in your seasonings. Don’t worry about being exact with your salt and pepper we’re going to add more to taste later.
  5. Lay your sweet potato sticks in a flat layer on your baking sheet. Make sure not to overlap any.
  6. Bake for 15 minutes.
  7. Gentle so as to not break them, transfer your sweet potato fries back into your large mixing bowl.
TO MAKE YOUR BROWN BUTTER SAGE SAUCE
  1. Start this step when you have about 5 minutes left on your baking timer.
  2. Over medium heat, melt your butter down in your frying pan. Use your rubber spatula to move your butter around consistently the whole time you are cooking—about 4 minutes after your butter has melted.
  3. Add in your sage and keep moving your butter.
  4. Once your butter has browned and your sage is cooked down and is more brownish black than the vibrant green you started with, it’s ready. Remove it from the heat.
  5. Pour your brown butter sage sauce over your sweet potato fries in your mixing bowl. Gently so as to not break your fries, coat them in your sauce.
  6. Season with salt and pepper to your taste. Don’t over do it on the salt, we’re going to finish the dish with your finishing salt.
  7. Pour it (butter that sank to the bottom of your bowl and all) onto a serving plate.
  8. Sprinkle your finishing salt over your dish.
  9. Serve hot and enjoy!
