TO MAKE YOUR ENERGY BALLS.
  1. In a large mixing bowl, combine the old-fashioned oats, chopped cashews, finely ground culinary lavender buds, finely grated lemon zest, and kosher salt.
  2. Add the honey and vanilla extract. Stir until the mixture is evenly coated and begins to clump together.
  3. Fold in the roughly chopped white chocolate chips.
  4. Let the mixture rest for 5–10 minutes to allow the oats to absorb some of the moisture.
  5. Using the cookie scoop, firmly press and roll the mixture into energy balls. Squeeze each portion in your hand before rolling to help it hold together. These are a bit crumblier than my other energy balls, it helps to wet your hands before and between rolling each ball. The moisture keeps your hands from sticking to the ball but also adds a touch of wetness to the ball that helps it hold itself together.
  6. Refrigerate for at least 30 minutes before serving.

  1. Start with 1 teaspoon culinary lavender buds for a balanced floral flavor. Increase to 1½ teaspoons if you prefer a stronger lavender flavor.
  2. If the mixture feels dry, add an additional teaspoon of honey and stir until combined.
  3. If the mixture feels sticky, stir in 1 tablespoon old-fashioned oats and let the mixture rest for a few minutes before rolling.


Pro Tip

These energy balls can be slightly crumbly when shaping. Lightly wet your hands before rolling to help the mixture hold together more easily.
