Instructions

TO ROAST YOUR SWEET POTATOES
  1. Preheat your oven to 425°. Toss the diced sweet potatoes with a drizzle of olive oil, salt, and pepper. Spread them out in an even layer on a baking sheet and roast until tender and just starting to caramelize—25 minutes.
  2. While your sweet potatoes are roasting, move onto the next step of cooking your pasta.
TO COOK YOUR PASTA
  1. Cook your Cavatappi according to package instructions until al dente. Drain, then rinse under cold water to stop the cooking process and keep your pasta on the slightly harder side.
TO MAKE YOUR PASTA SALAD DRESSING
  1. In a small mixing bowl, whisk together the olive oil, white wine vinegar, lemon juice, Dijon mustard, and minced garlic. Season with salt and pepper.
TO ASSEMBLE YOUR PASTA SALAD
  1. In a large mixing bowl, combine the cooked pasta, roasted sweet potatoes, fresh dill, fresh sage, and goat cheese. Pour the dressing over everything and toss gently to coat.
  2. Pop it in the fridge for at least thirty minutes to let the flavors mingle. Serve it chilled or at room temperature.
