TO COOK YOUR HERB MUSHROOMS
  1. In a large skillet, melt the unsalted butter over medium heat. Add the sliced mushrooms and cook until browned and tender, about 8–10 minutes. Stir in the minced garlic, chopped fresh thyme, and chopped fresh basil, cooking for 1 more minute until fragrant. Remove from heat.
TO ASSEMBLE YOUR STRATA
  1. In a buttered 9x13-inch baking dish, layer half of the cubed sourdough bread. Spoon half of the mushroom-herb mixture over the bread, followed by a generous sprinkle of goat cheese. Repeat with remaining bread, mushrooms, and cheese to create two cozy, flavor-packed layers.
  2. In a large bowl, whisk together the eggs, whole milk, salt, and pepper until fully combined. Pour the egg mixture evenly over the bread and mushrooms, pressing down gently to help the bread soak up the custard.
  3. Cover the dish and refrigerate overnight (or at least 8 hours) to let the flavors mingle and the bread soak thoroughly.
TO BAKE YOUR STRATA
  1. Preheat the oven to 350°.
  2. Uncover the strata and bake until puffed, golden on top, and set in the center—about 55 minutes but check at 45.
  3. Let it rest for 10 minutes before serving.
