PEACH AND MOZZARELLA CAPRESE

FRUIT CAPRESE for the win.

I love peaches. They make summer taste like summer. But who wants to do too much to them in the summer? Really, there’s no need to. In this recipe, I pull from the Caprese’s classic pairing of mozzarella and basil and add some mint and walnut that pair so well with peaches—it’s awesome!

Side note. If you’re a burrata lover, you can surely use all of these flavors and swap the burrata for mozzarella.

TO COAT YOUR MOZZARELLA PEARLS
  1. Drain the water from your mozzarella pearls.
  2. Place 3/4 of your mozzarella pearls in your small mixing bowl. Set the remaining pearls aside.
  3. Drizzle your olive oil over your mozzarella pearls.
  4. Season them with salt and pepper to your liking.
  5. Add your finely chopped basil and mint.
  6. Add your finely chopped walnuts.
  7. Toss until your mozzarella pearls are lightly coated. The crumble doesn’t stick tightly so don’t feel like you’ve done something wrong, you’re right on track.
TO ASSEMBLE YOUR CAPRESE
  1. Lay your peach slices in overlapping rows on your serving plate. You’ll want to make sure that some of the holes in the center of your peach slices are exposed. I did a row per peach, so 4 rows.
  2. Place your coated mozzarella pearls in any exposed holes in the center of your peach slices.
  3. Tuck your remaining whole basil and mint leaves in between some of your peach slices.
  4. Slice your remaining uncoated mozzarella pearls in half and place them in clusters between your peach rows.
