PUMPKIN BITES that look like adorable little pumpkins

These are too fun! They are great for when you have friends over or for adding to a seasonal cheeseboard—they will for sure impress. Make them for a Halloween get together or Thanksgiving. They are the perfect little pumpkin-y touch that you didn’t know you needed!

As a mom, I also love them for Halloween because they are on the heartier side which means that if I put them out early, my kids will get too full for most of the junk food around.

TO MAKE YOUR PEANUT BUTTER PUMPKIN MIXTURE
  1. In you large mixing bowl, use your rubber spatula to thoroughly combine your pumpkin puree, maple syrup, and peanut butter.
  2. Then mix in your chia seeds, cinnamon, nutmeg, ginger, and cloves until you have an even mixture.
TO TRANSFORM YOUR MIXTURE INTO LITTLE PUMPKINS
  1. Use your ice cream scoop to portion out 10 evenly sized balls. Roll each one in the palms of your hands and place them down on your baking sheet.
  2. One at a time, place a roughly 8 inch piece of dental floss under your ball. Wrap it around, as you would a present, making sure that the two ends of the floss overlap perfectly and then pull so that you have a groove. Turn the ball 90º and repeat that process—you should have a plus sign now. Much like a pizza, you are going to make two more lines that form an X over your + sign. Now we’re getting closer to a pumpkin! Repeat this process for all of your balls.
  3. Pour your Demerara sugar into your small mixing bowl. One at a time, roll each pumpkin ball in your sugar until they are all fully coated. Use your toothpick to go over the lines that you made with the dental floss so that they don’t get lost.
  4. Place a chocolate chip on the top middle—where all of your lines meet— of each pumpkin to give them each a stem.
  5. Add 2 pepitas (aka pumpkin seeds—so apropos) directly next to your stems to give the illusion of leaves.
  6. And you’re done! Happy Fall!
