CANDIED APPLES. Cheers to a sweet new year!

I first made these candied apples for Rosh Hashanah as a way of welcoming in a sweet and joyous year. They were so fun, I had to make them again after apple picking. Honestly, I would make them all year round and toss them on a cheeseboard to elevate it and make it extra special. Food for thought.

TO MAKE YOUR CANDIED APPLE SLICES
  1. On your cutting board, turn your apples onto their sides and use your chefs knife to cut each of them into 1/4 inch thick circular slices. When you get to the seeds, pause cutting, use your cooking tweezers to pluck them out, then continue slicing.
  2. Place your cooling rack on your baking sheet (the baking sheet will catch your excess sugar). Lay your apple slices on your cooling rack at least 1/2 inch apart from one another.
  3. Over medium-high heat, pour your sugar into your saucepan. Use your rubber spatula to stir consistently. Your sugar will melt and get more golden in color. Once it is a smooth golden, it’s ready and you should act quickly—about 5-7 minutes.
  4. Holding your saucepan by the handle in one hand, use your tablespoon in your other hand to spoon your melted sugar over each of your apple slices. After every three or so, sprinkle on a small pinch of finishing salt and thyme leaves. Repeat this process until all of your apple slices are coated and topped.
  5. Let cool until your sugar is hardened—just a couple of minutes.
  6. Serve. Eat. Enjoy!
