HOW TO MAKE IT.
  1. Preheat the oven to 375°. Grease the inside of a 6-inch cake pan with butter or butter spray and place it on a baking sheet to catch any drips.
  2. On a lightly floured surface, unfold the thawed puff pastry and cut it into a 5 × 6 grid, creating 30 equal pieces.
  3. Gently stretch each piece of puff pastry into a small rectangle. Wrap a cocktail frank snugly, overlapping the dough slightly and pressing to seal.
  4. Stand each wrapped frank vertically in the pan, starting around the outer edge and working inward. Create a second ring, then fill the center. The pieces should be close, but not packed too tightly allowing space for the pastry to puff.
  5. Brush the exposed pastry lightly with egg wash, avoiding the tops of the franks.
  6. Bake for 25 minutes, then rotate the pan. If the tops are browning too quickly, loosely tent with foil. Continue baking for another 15–25 minutes, until the pastry is deeply golden and fully baked through the center.
  7. Remove from the oven and let rest in the pan for 5 minutes.
  8. To unmold, place a plate or cutting board over the pan and flip. Remove the pan and base, then invert once more onto your serving plate.
  9. Brush lightly with olive oil or melted butter and finish with flaky salt. Serve warm.
