TO SHAPE THE BAKED BRIE
  1. Using a sharp knife and very cold brie, trim the wheel into an oval with gently pointed ends (aka the shape of a football). Place it on a parchment-lined plate and freeze for 15-20 minutes.
TO PREP THE PUFF PASTRY DOUGH.
  1. Lightly roll out one sheet of puff pastry to smooth the seams. Place the chilled brie in the center, then trim the pastry into a larger football shape.
  2. With a knife or pastry wheel, cut 1 inch wide strips around the brie, radiating out like sun rays.
  3. Start at one pointed end of your brie. Fold two strips, one from each side of the point up and over the brie, pressing where they meet. Brush with egg wash to seal. Continue folding in alternating pairs until the brie is completely wrapped. Press gently to seal the dough, but avoid stretching it.
  4. Transfer your wrapped brie to a parchment-lined baking sheet and chill in the fridge for fifteen minutes to help it hold its shape.
TO MAKE THE FOOTBALL LACES.
  1. Roll out the leftover puff pastry scraps. Cut one long center lace and four to five short cross laces. Overlap the shorter ones evenly spaced from one another over the longer piece. Bake at 400° until golden, about 7-10 minutes.
  2. Cool completely, then dust with powdered sugar to give them that signature white color.
TO BAKE THE BRIE.
  1. Brush the wrapped brie generously with egg wash.
  2. Bake at 400° for 20-25 minutes, until puffed and deeply golden. Let rest for 10 minutes before adding the laces.
  3. Place the cooled pastry laces on top to complete the football look. Serve warm with crackers, pretzels, or apple slices for scooping into that melty center.
