TO MAKE YOUR FISH.
  1. Preheat your oven to 400º.
  2. Fold each sheet of parchment in half, then reopen it so you have a center crease to guide your folding.
  3. Place one cod fillet just off-center on each parchment sheet. Season both sides of the fillets with sea salt and black pepper.
  4. Layer lemon slices over the top of each piece of cod.
  5. Tuck a sprig of fresh thyme on each fillet and drizzle with olive oil.
  6. Fold the parchment over the fish and crimp the edges to seal the packet completely in a delicate half-moon shaped envelope.
  7. Set the packets on a baking sheet and bake for 15 minutes, until puffed and aromatic. The fish should be tender and flake easily.
  8. Serve in the parchment for a little unwrapping magic, or plate with the lemon slices on top.
