I made these in a half batch of these rich and flavorful chocolate Nutella Linzer cookies for small Game Day gatherings. Double it up for larger groups!

Ingredients

FOR THE CHOCOLATE LINZER COOKIES (Half Batch)
FOR THE NUTELLA FILLING

Instructions

TO MAKE THE COOKIE DOUGH.
  1. Cream the butter and granulated sugar until smooth and slightly fluffy, about 2 minutes.
  2. Add the whisked half egg and vanilla extract, and blend until combined.
  3. In a separate bowl, whisk together the flour, cocoa powder, and salt. Add the dry ingredients to the butter mixture and mix just until the dough comes together.
  4. Form into a disc, wrap it snugly, and chill for at least 1 hour.
TO ROLL & CUT YOUR DOUGH.
  1. Preheat your oven to 350°.
  2. Roll the chilled dough between two sheets of parchment paper to ¼-inch thickness.
  3. Cut out oval cookies. On half of them, create a little football window by carving out a narrow almond shape using a paring knife.
  4. Refrigerate the cookies for 10–15 minutes to firm up.
  5. Bake for 9–11 minutes. Cookies should be set at the edges but still tender in the middle. Let them cool completely on a wire rack before moving on.
TO MAKE THE NUTELLA FILLING.
  1. In a small bowl, mix Nutella with confectioners’ sugar until it thickens into a smooth, frosting-like spread.
TO MAKE THE WHITE CHOCOLATE STICHES.
  1. Melt the white chocolate gently (microwave in short bursts or use a double boiler). If it's too thick to pipe, stir in the tiniest bit of coconut oil. Pipe little football “stitches” wax paper and chill until fully set.
  2. Carefully peel them off once firm.
TO ASSEMBLE YOUR COOKIES.
  1. Spread the Nutella filling onto the flat side of the solid cookies. Top with a windowed cookie and give it a gentle press.
  2. Use a dot of melted chocolate or Nutella to attach the white chocolate stitches right on top.
