SKILLET MARBLED BROWNIE A LA MODE

LET'S GET LOADED!

I originally made this recipe for a client for an Instagram post and, um, it was so frickin' good, I had to make it again (and, again). I did make it with a couple of tweaks the second time around due to the ingredients I had around (that's the version you'll see below) and, well, get ready to fall in love!

 

There are loads of reasons to fall in love with this decadent dessert. Chocolate lovers, I think the visuals probably say it all. I'll go on. The gooey center of the brownie gives it a lava-like richness. The cheesecake swirl gives a complexity to the brownie that makes it extra dynamic. And, all of the playful toppers add a variety of textures that make it extra fun on your tongue to eat.

Ingredients

Instructions

TO MAKE YOUR BROWNIE BATTER
  1. In your saucepan over medium-high heat, melt down your chocolate and butter. Use your rubber spatula to consistently move it all around to keep it from burning.
  2. Remove from heat and let cool.
  3. In your mixing bowl, whisk together your egg and sugar.
  4. Add your melted chocolate to your egg mixture.
  5. Whisk in your flour and salt.
  6. Lightly grease your cast iron server.
  7. Pour your chocolate mixture into your cast iron server.
TO MAKE YOUR CHEESECAKE MARBLING BATTER
  1. Preheat your oven to 325º.
  2. In your second mixing bowl, use your rubber spatula to combine your cream cheese with your sugar.
  3. Add your egg yolk and sugar.
  4. Mix thoroughly.
  5. Drop your cream cheese mixture in dollops into your brownie batter. Use your fork to swirl your cream cheese batter around into a marbled texture.
  6. Bake until puffed but not completely settled in the center—about 30 minutes.
TO TOP YOUR MARBLED BROWNIE
  1. Use your chinois to dust your brownie with confectioner's sugar.
  2. Add a large scoop of your cookies and cream ice cream to the center of your marbled brownie.
  3. Drizzle your caramel sauce over your ice cream.
  4. Use your microplane to shred your semi-sweet chocolate over your ice cream.
  5. Add some small chunks of your semi-sweet chocolate on top of your ice cream.
  6. Serve with spoons.
