Mini taco, mega moment. These are my take on the burger taco trend that you’ve probably seen on social. I’m not going to lie, it’s an immediate new fan-favorite in my home—literally had to dole out seconds and thirds.

This lean turkey meat gets a zesty glow-up with a spice blend that brings the heat and the herbs. Seared to perfection right onto crisp little taco rounds (yes, you read that right—no buns needed!), each bite is layered with smoky, citrusy flavor and cooled down with a silky, thyme-kissed garlic crema. Crumbled goat cheese and a spritz of lemon make this the kind of weeknight dinner that feels like it should be served with a glass of chilled rosé. And you know what? It should.

Ingredients

Instructions

TO MAKE YOUR TURKEY BURGER TACOS
  1. In a small bowl, mix together the ancho chili powder, garlic powder, paprika, cumin, oregano, thyme leaves, and salt.
  2. Add the seasoning blend to the ground turkey and mix until fully and evenly incorporated.
  3. Divide the turkey mixture into six equal portions. Press each portion evenly over the surface of a mini corn tortilla, forming patties directly onto the tortillas.
  4. Heat grapeseed oil in a skillet over medium-high heat. Place each tortilla meat-side down and sear for about 3 minutes—or until browned.
  5. Reduce heat to low, cover the skillet with a lid, and continue cooking until the internal temperature of the turkey reaches 165º. Use a meat thermometer to check. Once cooked, transfer to a plate or cooling rack to rest for 5 minutes.
TO MAKE YOUR GARLIC THYME CRÉMA
  1. In a bowl, whisk together the greek yogurt, mayo, garlic, lime juice, thyme leaves, cumin, celery seed, and salt. Taste and adjust seasoning to your liking.
TO SERVE
  1. Dollop a spoonful of garlic-thyme créma over each turkey burger taco. Top with crumbled goat cheese, a few extra thyme leaves, and a bright squeeze of lemon juice.
