HOMEMADE CROUTONS. They’re so easy and so much more delicious.

You know how sometimes it’s easier to just buy an ingredient? Like croutons. You, like me, tell yourself, “They won’t taste that different.” My friends, we were wrong.

Homemade croutons are in another category entirely. Soft brioche bakes into crisp, deeply golden cubes with buttery richness, savory herbs, and just enough garlic and black pepper. A finish of flaky sea salt makes every bite pop, while optional parmesan and crushed red pepper add even more depth.

Scatter them over Caesar salad, creamy soups, panzanella, baked macaroni and cheese, or stuffing. They are simple to make, easy to store, and far too good to go back to the bagged kind.

Super easy to make—like how have I not been doing this all along?—rich brioche baked with butter, garlic, and dried herbs until it becomes crisp, golden, and deeply savory croutons.

TO PREPARE THE CROUTONS.
  1. Preheat the oven to 325°. Line a large rimmed baking sheet with parchment paper.
  2. Place the brioche cubes in a large mixing bowl.
  3. In a separate bowl, whisk together the melted butter, olive oil, kosher salt, black pepper, garlic powder, dried thyme, and dried parsley.
  4. Pour the butter mixture over the brioche. Gently toss until the cubes are evenly coated without compressing the bread.
TO BAKE AND FINISH.
  1. Arrange the seasoned brioche cubes in a single, even layer on the prepared baking sheet.
  2. Bake for 18 - 22 minutes, stirring and rotating the croutons halfway through, until they are crisp and deep golden brown.
  3. For firmer, extra-crisp croutons, turn off the oven and leave the baking sheet inside for an additional 5 - 10 minutes with the oven door slightly open.
  4. Remove the croutons from the oven and immediately finish them with a light pinch of flaky sea salt.
  5. Cool completely on the baking sheet before serving or storing.

Notes

  1. Store the cooled croutons in an airtight container at room temperature for up to 1 week.
  2. For longer storage, freeze the croutons in an airtight freezer-safe container for up to 3 months. Allow them to thaw at room temperature, then refresh them in a 300° oven for 5 - 8 minutes when needed.
  3. Serve the croutons with Caesar salad, tomato soup, panzanella, butternut squash soup, French onion soup, baked macaroni and cheese, or homemade stuffing.
