Four ingredients, fifteen minutes, and a little oven magic. This roasted Bibb lettuce salad is the kind of dish that feels like a quiet luxury because it’s so simple, uniquely warmed, and just unexpected enough to turn heads. The Bibb lettuce gets golden and just charred at the edges, hazelnuts toast alongside for an earthy crunch, and everything gets finished with a drizzle of honey and crumble of honey truffle goat cheese. This salad looks anything but easy (shhh, it's lying to you)! Toss it all in the oven, assemble the 4 core ingredients, and you're ready to eat!

Instructions

  1. Preheat your oven to 425º.
  2. Arrange the halved mini bibb lettuce heads cut-side up on a sheet pan. Drizzle generously with olive oil and season with salt and pepper.
  3. Scatter the hazelnuts on the same sheet pan around the lettuce.
  4. Roast everything in the oven for 15 minutes or until the lettuce edges are crispy and golden and the hazelnuts are deeply toasted.
  5. Remove from the oven. Once cool enough to handle, rub the hazelnuts in a clean kitchen towel to remove the skins. Then roughly chop them.
  6. Arrange the roasted lettuces cut-side-up in an overlapping line on your serving platter.
  7. Drizzle with honey. Sprinkle on the toasted hazelnuts and the crumbled the honey truffle goat cheese on top.
  8. Serve warm or at room temp.
