Instructions

TO MAKE YOUR CHOCOLATE CARAMEL COVERED APPLE SLICES
  1. Preheat your oven to 350º.
  2. Line your baking sheet with your Silpat and lay your apple slices on it at least an inch apart from each other.
  3. Place a quarter of a soft caramel chew on the middle of each apple slice. Save your extra caramel for the topping.
  4. Bake for 3 minutes to melt your caramels and soften your apple slices. Use your butter knife to mush the caramels so that they spread around the whole top of each apple slice. It is super sticky and will not adhere well to the apple. Don’t worry, you’re doing a perfect job aaaand, we’re going to cover it all with chocolate any way so don’t worry about aesthetics here—it’s going to taste amazing!
  5. Refrigerate your slices for the few minutes it takes to prep your chocolate.
  6. Pour your chocolate chips into your microwave safe glass bowl. Microwave for 2 minutes making sure to open your microwave and stir your chocolate with a rubber spatula every 30 seconds. You’ll know when you are finished when most of your chocolate is melted sans a few chips. Don’t continue to microwave at this point or you will burn your chocolate. Instead, stir your chocolate and the extra lumps will melt away. Add your coconut oil and stir it in until it’s fully integrated.
  7. Spoon lots of chocolate over each caramel coated slice of apple. Use the back of your spoon or your butter knife to spread it so that it covers all visible parts of your apple slice. FYI, I like to lay it on extra thick! Again, don’t worry about pretty here either. We’ll get there.
  8. Refrigerate for 10 minutes. During that time…
  9. In your small mixing bowl, combine your pecans, Turbino sugar, and your cinnamon. Mix until it’s evenly incorporated.
  10. Use your metal spatula to flip your chocolate coated apple slices.
  11. Heavily coat the exposed side of your apples with chocolate.
  12. While your chocolate is still wet, liberally sprinkle your pecan mixture onto it—like glitter on glue. Use the palm of your hand to gently pat it on.
  13. In 15 second intervals, melt your extra caramel down in a small microwave safe bowl. Using a spoon or knife, drizzle it in lines across the top of your chocolate pecan covered apple slices.
  14. Refrigerate until they are fully hardened—about 10 minutes.
  15. That’s it! You crushed it! Enjoy them!
