TO MAKE THE CHOCOLATE SHELLS
  1. Place your chocolate mold on a baking sheet.
  2. Melt your chocolate chips in a microwave-safe bowl, heating in 20-30 second bursts and stirring between rounds until smooth. Spoon 2 tablespoons of melted chocolate into each mold cavity. Tilt or brush to coat the sides completely.
  3. Refrigerate for 10 minutes.
TO MAKE THE MARSHMALLOW CANDY CANE FILLING
  1. Crush your candy canes into a mix of small shards and peppermint dust. I like to put them in a Ziploc bag, smash the bag against a hard surface a few times and then roll the fragments with a rolling pin. This takes about 2 minutes.
  2. In a mixing bowl, stir together marshmallow fluff and the crushed candy canes until they are fully incorporated.
TO FILL THE BARS
  1. Divide the candy cane fluff into four even portions. While still in the chocolate mold, scoop a portion candy cane fluff into each chocolate shell. Press very gently to flatten the filling, leaving a small border around the edges. Chill for 5 minutes.
  2. Spoon more melted chocolate over each cavity, filling it to the top. Use a bench scraper to scrape the chocolate into a flat even layer.
  3. Chill for 20 minutes, or until fully set.
  4. Pop out of the chocolate mold. Eat and enjoy!
